Yuzu Zest

Preparation

Add ice and egg white, shake well. Add remaining ingredients, shake again. Strain and pour into a small white wine (Riesling) glass. Garnish with a tart tasting berry (cassis or blackberry)

Pairs exceptionally well with foie gras.
